1 x 250g sirloin steak per person
1 handful each: coriander, basil and mint
A good glug of olive oil
4 cloves crushed fresh garlic
Juice of 2 lemons
3 green chillies, depipped and finely chopped
Salt and coarse black pepper
- Place all the ingredient, except for the steaks, into a blender and whizz for a minute or so. Add more olive oil if the consistency is too thick.
- Meanwhile season your sirloin steaks with salt, paprika and coarse ground black pepper and seal them in a griddle pan or braai grid until they are cooked to your perfection.
- Slice the steaks into strips and drizzle them with the salsa verde and serve them with some extra salsa for dipping, together with a pot of maldon salt.
- The salsa verde can also be served with cold roasted fillet or sirloin as well as grilled chicken breasts.
