Grilled Sirloin


1 x 250g sirloin steak per person
1 handful each: coriander, basil and mint
A good glug of olive oil
4 cloves crushed fresh garlic
Juice of 2 lemons
3 green chillies, depipped and finely chopped
Salt and coarse black pepper


  1. Place all the ingredient, except for the steaks, into a blender and whizz for a minute or so. Add more olive oil if the consistency is too thick.
  2. Meanwhile season your sirloin steaks with salt, paprika and coarse ground black pepper and seal them in a griddle pan or braai grid until they are cooked to your perfection.
  3. Slice the steaks into strips and drizzle them with the salsa verde and serve them with some extra salsa for dipping, together with a pot of maldon salt.
  4. The salsa verde can also be served with cold roasted fillet or sirloin as well as grilled chicken breasts.
