4 pork fillets (trimmed)
100ml Soy Sauce
2 tsp sugar
1 tsp salt
50ml white wine vinegar
50ml water
50ml oil (sunflower)
1 tsp salt
1 tsp sugar
Coarse black pepper
1 tsp crushed garlic
1 cup chopped flat leaf parsley
½ cup capers


  1. Mix all the marinade ingredients together and rub over the fillets.
  2. Place the fillets in a very hot oven (240°C) for about 10 minutes.
  3. Remove and allow to cool (cook the fillets to your preference – although they should be slightly pink, otherwise they become too tough)
  4. When the fillets are cold, slice them and arrange on a serving platter.
  5. Mix all the ingredients for the sauce together and pour over the meat.
  6. Refrigerate until serving.
