INGREDIENTS:

1kg Israeli cucumbers
50ml olive oil
100 ml sesame oil
1 tablespoon sugar
2 knobs ginger, grated
4 garlic cloves, chopped
50ml white wine vinegar
2 red chillies, depipped and finely sliced
Half a bunch of fresh dill
Salt and pepper

METHOD:

  1. Slice the cucumber diagonally into thick slices.
  2. Place the rest of the ingredients (except the dill) into a pot and bring to the boil.
  3. Remove from the heat and add the cucumber slices.
  4. Pour into a serving dish and mix in some chopped dill and more thinly sliced red chilli.
